Just a vague-ish idea, but: 1

Perhaps this demonic lord wanted to keep humans around as slaves or something similar. If you think of it in evolutionary terms, it would make the most sense to only keep the timid, most likely obedient ones around as 'breeding stock' or whatever. 2

Or, perhaps there's something unique about her, or even her family line? You could link that to her ability to travel between dimensions, and it would be a plausible reason to choose her.3

Lastly, he could have spared her on a whim, finding it amusing to keep someone so helpless around, not knowing of her ability.4
